Paleo Chocolate Coconut Cookies

I knew my sweet tooth was acting up.  I had been craving a sweet treat and because of that this weeks experimental recipe is a dessert.  I was looking at scone recipes and found several on line and tweaked them a bit to come up with this.

It turned out great and the texture and taste were both awesome.  While these cookies are shaped like a scone I have to say that is the only resemblance they have to a scone.  So if you are looking for that buttery crispness of a scone, this is not the recipe.


However, these make great cookies, which is exactly what I will shape them into next time.  They reminded me of, a chocolate coconut chewy cookie.  Think almond joy cookie.

They are delicious and I will be making them again because they are a great little sweet treat that’s not too hard on the waistline but the ingredients are a bit expensive, so I’m really glad it tasted good.

What is the Paleo diet?  The paleo diet runs on the same foods our hunter-gather ancestors supposedly ate: fruits, vegetables, meats, seafood, and nuts.  Anything that comes in a box, jar, or bag should be avoided on the paleo diet—as should anything that just wasn’t consumed back then. That means no grains, dairy, added salt, or legumes.

The Z Man and I do not follow the Paleo diet, but I would have to say that our style of eating does lean a bit in that direction.

I was looking for a sweet treat that was low in carbohydrates and sugar and I found it….

Paleo Chocolate Coconut Cookies

  • 2 cups almond flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 cup enjoy life chocolate chips
  • 1/4 cup unsweetened coconut flakes
  • 1 egg
  • 2 Tbsp pure maple syrup
  1. Preheat oven to 375 degrees
  2. In a large bowl, combine almond flour, salt, baking soda, chocolate chips, and coconut
  3. In a smaller bowl, mix the egg and pure maple syrup until well blended
  4. Add the wet ingredients to the dry and mix well
  5. Knead the mixture with your hands if necessary to ensure an even distribution of ingredients
  6. Form mixture into a circle approximately 1/2 inch thick
  7. Cut the circle like a pizza into 6 or 8 slices depending on the size you want or using a cookie scoop, form balls and flatten into round cookies
  8. Transfer to a parchment lined baking sheet
  9. Bake for 10 minutes or until golden brown and cooked through

You can very easily change the flavors of these cookies by using your favorite flavors such as dried fruits or a different chocolate.  The good life chocolate chips are paleo and a bit higher in price than regular chocolate chips, but again you could use regular chocolate easily if you don’t “need” to follow a paleo diet.

Happenings On The Homestead

The Z Man bagged another nice buck last weekend which fills his tag for bucks this season.  I can tell he is a little melancholy about being finished with deer season, but I am so happy that we have P-L-E-N-T-Y of meat in the freezers.

I’m so proud of the Z Man.  I swear he is like the deer whisperer.  It’s almost as if the deer come to him.  He enjoyed his hunting this year.  He bagged a 10 pointer, a 8 pointer and a 7 pointer.  I canned one and the other two are in the freezer.  We are so very blessed.


I was not able to help Z Man with the processing because I’m still pretty limited with the use of my left hand from cutting my finger.  He did a fine job with it.

We got the bacon from hog #2 smoked.  This is one of the most beautiful sights…  I wish you could smell it!!!


This bacon will be sliced, packaged and frozen.  No nitrates or unknown ingredients here, just pure pork goodness.


When smoking bacon it’s not necessary but it is best to leave the pig skin on the meat to keep it from shrinking up a lot.  Last year I removed the skin prior to smoking the bacon, but this year I left it on and look what we ended up with.  I know this can be used for something great, I’m just not exactly sure yet what that is.  I think I’m leaning toward dehydrating it a bit for dog treats.  Lucky dogs!


I needed to bake an apple pie to take to work for a birthday present…  The Z Man requested one too 😉

I decided to add some dried cranberries for extra zing.  Delicious, especially with a big scoop of ice cream.  It’s the holidays, we’re supposed to indulge a little bit.


I made a batch of yogurt because we always have yogurt in the fridge.  Yogurt, fruit, granola and a drizzle of maple syrup is almost as good as that cranberry apple pie. 😉


Right before thanksgiving I bought a large bag of carrots and potatoes.  I know, I know, but I wasn’t about to let them go to waste.  They will make an easy, quick, and lovely stew with the canned venison.

What’s Cooking 5/17/16?

The weather has been unseasonably chilly the past few days and today it’s rainy too so I think it’s a great day for a pot of soup.

My favorite soup is potato soup.

I’ll tell you how I make my potato soup, but bear with me because I do not measure at all with soups, it’s more of just a toss it in the pot process.  But that’s part of the charm of soup isn’t it?  Almost anything goes.

First a little funny for you…   I actually googled the proper spelling of bear or bare to use in my above comment “bear with me” and if I had used the spelling “bare” with me, then by one definition I would have been unintentionally asking you to undress with me….

Whew, good thing I googled that!  🙂

Potato Soup Recipe

  • peeled and diced potatoes
  • chicken stock
  • diced celery
  • diced onion
  • finely chopped fresh rosemary
  • rendered bacon fat or olive oil
  • salt and pepper to taste
  • masa corn flour
  • milk – warmed and full fat preferably

Peel and dice potatoes and boil in chicken stock until tender.  While potatoes are boiling saute celery, onion and rosemary in bacon fat until softened, then add the mixture to the simmering potatoes.  Test a couple of potatoes with a fork to make sure they are done and then add a  heaping tablespoon (or 2) of corn masa while the soup is simmering (not boiling).  You will need to stir the masa into the soup quite well and it will take a couple of minutes to get it completely incorporated.  Then add warmed milk until you reach the “soup” consistency you like.

I find that by boiling the potatoes in chicken stock it adds flavor to the potatoes and the same for the masa corn flour.  It adds a little flavor while not leaving that pasty texture you sometimes get with corn starch or flour.

My favorite thing to go with potato soup is a big pan of corn bread.

You can top your potato soup with cheese, sour cream and bacon bits what ever you like.

That’s the great thing about soup, you can just toss in anything you like.

Sometimes the next day I’ll add 2 bottles of clam juice and clams to the potato soup and it magically turns into clam chowder.  YUM!!!

It’s Garden Time

The tomato seedlings are doing good.  So far so good.  In the past we haven’t done well with seedlings and have had to use already established plants from our local nursery.  There isn’t anything wrong with that except it’s not as cost effective as starting your own.  In a mode of uncertainty I planted extra thinking that if some died off then we still had a chance.  Looking at them now, if all of these seedlings make it we are going to be up to our ears in tomatoes this year.

I ordered our seeds from Burpee this year and I got all organic and some heirloom varieties.  I got roma, san marzano, heirloom slicers, and black cherry tomato seeds. I’m especially excited about the black cherry tomatoes.

If I’m being honest, I have to admit that in years past I’ve been guilty of not enjoying our gardens.  I get so wrapped up in the process of canning and putting up the harvest that I forget to enjoy the seasons of fresh picked, sun kissed, sweet vegetables.  Not this year.  While I still intend to put up the harvest, more importantly I plan to enjoy all the fruits of the Z Man’s labors to the fullest all summer long, and I can’t wait!

This weekend we planned the layout of the garden and we’ll start putting stuff in the ground this week.

Oh, and on another exciting note we ordered our two piglets this weekend too.   They were just born 4 days ago so it’ll be a bit before we get them.  I love this time of year and just love our life. 🙂
